Our search began in Rio Pusteria, a village situated at the point where two of the most important valleys of South Tyrol meet. From here we began ploughing fertile terrain in a micro-area that exactly met our principle of “fields of deliciousness”.
This area, whose cheese products have all too often been under-
evaluated or even completely ignored, is perfect for making cheese of the highest quality and with prestigious, unique and unexpected organoleptics due to its traditions and geographic make-up,
Thanks to the abundance of large and salubrious pastures, and to the diligent work of local farmers, we were able to identify some true artistic artisan dairy farmers that were capable of extracting those
tasty “nuggets” from the mountain milk that are the vital “white gold” for making our cheeses.
The initial and somewhat limited number of cheeses and gastronomic specialities were offered exclusively at first to the fond and demanding clientele of the well-known restaurant, “Pichler” and its adjoined delicatessen shop. These days, our base is in Varna, and this is where you can visit our offices and shop.
