Orange-rind cheese with straw-yellow paste produced by the young cheese-maker Stefan Learner in the family farm situated at an altitude of 1360m in Nova Ponente, in the heart of the Dolomiti. Even though it can be categorized as a cutting cheese, the curd gets cut into rice-size grains, procedure exclusive to hard-paste cheeses. Grazing land aromas are deep and intense.
