Pecorino allo zafferano

Tipycal product of the Enna district. Its peculiarity consists in the fact that pepper grains and wild caramelized saffron get added to the curd, conferring its characteristic bright yellow color. The texture is elastic and friable.

Mildly structured red wines like Nero d'Avola, dates, prickly pears.
