The cheese is covered by mountain hay, flowers and herbs inside the barrel. The hay in the past it was used to carry the shapes without damaging them. After aging in the barrels, the cheese is packaged in fresh hay. The texture is buttery and soluble, with an acidulous flavor in the aftertaste and an aromas of hazelnut and melted butter.
