Vezzena del Trentino
This cheese can be described as the quintessence of the Trentino traditional cheeses. It has been said that Francesco Giuseppe the Emperor demanded this cheese every single day. Even when deeply cured, the Vezzena cheese retains all of its buttery and mellow characteristics, letting peculiar aromas burst out, depending on the season. The Slow Food Vezzena Presidium, recognizable by its branded “M” which stands for Malga, concerns exclusively with Vezzenas produced during the summer time using pasture-milk.
