A light brown spun paste cheese with a characteristic sphere shape. After the spinning and moulding processes, the scamorza are put into a brine solution and finally tied with natural fibers and smoked with wheat straw. Extremely versatile in the kitchen, great as a filling or simply grated onto vegetables and pasta timbale. The texture is elastic, with a sweet and acidulous flavor.
White wines like Falanghina or reds like Aglianico.
