In this cheese, tradition and innovation find a combination. The pear flour was often used in a South Tyrol cuisine as a sugar substitute.  In this refinement the smells of roasting pears blend perfectly with the creamy flavours of Camembert cheese.  The texture is soft and creamy, with a sweet and enveloping flavor.
