Taleggio is a certified DOC product made with whole cow milk. It takes its name from the Taleggio Valley, situated in the Bergamo area. The Val Taleggio Taleggio is cured in pine wood trunks at a temperature of 5-8 C° and a humidity level of 95% for a period of 35 days. The texture is soft and creamy with a sweet and tasty flavor that tends to intensify with aging.
