Pecorino rosso di Pienza
One of the most ancient methods of preserving Pecorino cheese, consisted on rubbing the wheels with tomato paste several times a day, so that the flavor would get more intense and the aromas more enjoyable. In order to convey an even more interesting range of aromas in the cheese, they used to add chili peppers which would also extend the shelf life of the product. The texture is elastic and friable.
