The refinement with candied fruits (bergamot, orange, lemon), pistachios di Bronte, cinnamon leaf, cloves and cocoa beans mitigates  some of the stinging notes of the cheese, whose natural fatness is softened by the acidity of candied fruit. The texture is buttery and soluble.
