"Trifulau"is the expression in the Piedmontese dialect which defines the man who, in the company of his dog, wonders around the woods in search of truffles. This cheese marries together the flavors of the milk with those of the Piedmontese black truffle: ancient method to preserve the aroma of the truffle. The texture is soft and creamy, with a flavor between sweet and salty and aromas of truffles and undergrowth.
Ideal as an aperitif with white wines like Chardonnay or Arneis, salad with vegetables and roots, white bread.
