The denomination of this cheese derives from the name of its original cheese-maker, Richard. The son, Manuel, recently took over the farm from a managerial point of view but it was the father who started their business of cheese manufacturing, therefore the name has remained in his honor. Thin washed-rind, porcelain white color and scents o undergrowth which develop diring the ripening-maturation process in our Bunker. The texture is elastic and friable.
