Puzzone di Moena DOP
The custom of calling this cheese "puzzone" (stinky) goes back to the 1970's, era in which this product was already vastly popular and had the Ladin name "spretz tzaori". It takes its name after its characteristic pungent smell. The Slow Food Puzzone presidium has a big M marked on it which stands for Malga. Thin crust marked by typical brown-reddish brand, soft straw-yellow paste with an elastic and friable texture and intense aromas of meadow scent and alpine herbs.
