Marzolino rosso

The “Marzolino”(from March, the name of the month) is made by heating the milk up to 30-32 C and adding the curd afterwards. It is a cheese which is meant to be consumed fresh, on its own; the crust gets cured tomato paste which play a vital role in the preservation of the cheese. The texture is elastic and soluble with a sapid and acidulous flavor.

Pairings

Aromatic white wines or light rose wine, vegetables (artichokes, eggplants, zucchinis).
